Sell all bar one 1

This may or may not be possible.
Say I have 10 shares in Pepsi and want to create a stop loss to sell all my shares when they drop but hold onto just one share.
Also maybe a place on my portfolio where I can put certain shares go the long term and more or less forget them and concentrate on my main portfolio as these ‘keep’ stocks are not shown.

Just set a stop loss for 9 of your 10 shares?

As Donald suggests, limit orders for 9 shares should work.

You might want to put them in a pie and keep them separate from the rest.
