If I have a limit sell in place for my GME shares and the servers crash again, are my shares guaranteed to sell? And if not, will Trading212 take responsibility for them not selling and pay me the money I would have got from them?

If your price is reached on market it will execute but, for market being down I couldn’t 100% answer as don’t know wether the sell would self execute being with order having been placed with broker when opened
